DAY 1

Chia Pudding

🌱 Food is Medicine. This is healing disguised as breakfast.

🛒 

Ingredients

  • 2 tbsp chia seeds
  • 400ml coconut milk 🥥
  • 120ml filtered water 💧
  • 2 pinches cinnamon 🌿
  • ¼ tsp vanilla (scraped from pod) 🌼
  • 1 tbsp brown sugar or coconut sugar 🍯

Method

  1. In a mason jar or bowl, combine all ingredients.
  2. Mix well, stir a few times over the next hour to prevent clumping.
  3. Let sit overnight in the fridge ❄️ (Essential: Prep the day before!)

Brownie Base

In a food processor:

  • Roughly chop ½ cup raw almonds — set aside.
  • Blend 1 cup walnuts into a fine crumble.
  • Add ½ cup raw cacao powder 🍫
  • Gradually add 1¼ cup medjool dates, pulse until mix resembles cake crumbs.
  • Fold almonds back in, press mixture into a lined tin and refrigerate or freeze to set ❄️
  • Optional: Add ¼ cup goji berries for an antioxidant boost! 🛡️

🍯 

Silky Chocolate Icing

Melt:

  • ¼ cup coconut oil (until liquid)
    Then blend with:
  • 1 cup soaked medjool dates (30 mins in water)
  • Pinch of pink Himalayan salt 🩷
  • ½ cup raw cacao powder
  • 3 tbsp pure maple syrup (adjust sweetness to taste)
  • ½ cup filtered water 💧

Spread icing over the brownie base, chill again until set. Slice & enjoy. 🍰
