DAY 1

Chia Pudding

Ingredients

  • 2 tbsp chia seeds
  • 400ml coconut milk 🥥
  • 120ml filtered water 💧
  • 2 pinches cinnamon 🌿
  • ¼ tsp vanilla (scraped from pod) 🌼

Method

  1. In a mason jar or bowl, combine all ingredients.
  2. Mix well, stir a few times over the next hour to prevent clumping.

In a food processor:

  • Roughly chop ½ cup raw almonds — set aside.
  • Blend 1 cup walnuts into a fine crumble.

  • Gradually add 1¼ cup medjool dates, pulse until mix resembles cake crumbs.
  • Fold almonds back in, press mixture into a lined tin and refrigerate or freeze to set ❄️

Melt:

  • ¼ cup coconut oil (until liquid)
    Then blend with:

Method


Add oats and soy milk to a saucepan over gentle heat.


Cook slowly, stirring often. Add more soy milk as needed until the porridge becomes soft, sloppy, and gloriously gloopy — this is exactly what we want.


Stir through vanilla, cinnamon, and sugar. Taste and adjust sweetness if needed.


Remove from heat and let sit for a moment before serving — warmth without urgency calms the system.
